Ahh so sorry to hear that, Marilyn. Another alternative to rice is cauliflower rice. As for soybeans, black beans aren’t really a close substitute, as they aren’t fermented. It is definitely hard to thicken sauces without a starch like cornstarch, potato starch, flour, or even actual potato.

Unfortunately, I cannot now have soy or starch or sugar. This means… no soy sauce, no rice, and emphatically no corn starch. All the recipes appear to contain these. I have a lentil orzo I can use instead of rice (NOT the same, but it works). I am hunting for Aspergillus tamarii and hope to experiment with using black beans instead of soy beans to see if I can get a safe and flavorful substitute. I stop breathing if I eat soy anything. But corn starch is a major problem. I usually use cooked vegetables to thicken sauces, my favorite being peeled and steamed zucchini /courgettes as it has a pretty neutral flavor. I would *kill* for some shrimp in lobster sauce, or any number of other dishes if I could figure out how to do them safely!
