Hi Will, we haven’t figured out how to make these with gluten-free flour. Perhaps try a gluten-free milk bread recipe for the dough portion and then just use the filling recipe from here?

Love this recipe, made it multiple times now, and have had them come out just like the photos here! However, planning to make some to share with a coeliac friend. Would store bought gluten free flour work as a 1 for 1 substitute for the bread flour or would I have to do some extra tweaking? Many thanks :)

This recipe especially for the filling is absolutely perfect with the consistency & flavors! Thanks so much for sharing! I have never made cha-siu bao from scratch, but had some leftover milk bread dough, and decided to try out the filling since it has been on my try out list. Didn’t have time to actually make cha-siu, but I replicated the flavors using ground pork with the typical seasonings, and just went by your recipe with the ratios/ingredients. Just came out perfect and it’s sooo good. Don’t live anywhere close to any Chinese Bakeries here in the southeast but it’s awesome I can make it can home now. Cheers and thanks!

Yay! Best results yet for one of my ‘pilgrimage’ foods. The tiny bao offer the perfect bite, and the dough was a dream to work with. I was concerned I over-proofed (2+ hours in oven with mug of boiling water hack) but absolute perfection at 28 grams each and a scant tablespoon of filling. Did a 2 minute broil after 15 in the toaster oven to add some browning.
